Introducing: Healthy Wednesdays. Good-for-You Recipes & Healthy Tips by Spark & Spark

We know what it means to be a mom, a wife, take care of the kids, run errands, work, cook, clean around the house… and that sometimes you just run out-of-ideas when it comes to dinner cooking or afternoon snack.

That is why we are thrilled to present to you: ‘Healthy Wednesdays’ by Spark & Spark. Every Wednesday, we will be featuring a simple, easy to make, healthy recipe for you to enjoy! It can be a quick snack, smoothie, or a whole meal for a weekend cook-off!

As moms, we always want the best for our families, and we believe that good, healthy food can make wonders for our health. Plus, it can be a fun activity to share with the kiddos

Healthy Wednesday #1

Pineapple Spinach Smoothie with Coconut and Chia Seeds

I've been addicted to green smoothies for quite some time now... they are my fresh little treat every morning, and they are so good for your health! The great thing about green smoothies is that you don't feel the taste of the spinach. I've used kale, and collards on other recipes, and they just get blended with whatever fruit I choose to mix it with.

Adding the chia seeds it's great because they are an amazing source of healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

This recipe is actually one of my favorites. I love the combination of pineapple and coconut, and I like to top it with coconut flakes, so every time i take a sip, I get to chew them too. High in Vitamin A, B-6, C, Manganese and fiber.

Ingredients

1 handful baby spinach

3/4 cup pineapple (fresh or frozen)

1 medium banana

6 oz vanilla yogurt

1 tbsp chia seeds

1/4 cup coconut flakes

Water to cover all ingredients

Directions

Add the spinach, pineapple, banana, yogurt, coconut flakes, and chia seeds into a high-speed blender. Top it with enough water to just cover all ingredients. I used regular water this time, but i've used coconut water or coconut milk, to make it creamier. Blend it until smooth, for about 35-40 seconds. Top with a teaspoon of coconut flakes, and enjoy!
