Healthy Wednesday #3: Carrot Asparagus Warm Salad

onFor many of us, getting ready for dinnertime can be hectic, so I always try to make super-easy and healthy side dishes so I can concentrate in the main protein. Today, I want to share with you a super easy and quick to make carrot and asparagus warm salad. It is only made with 6 ingredients, and takes less than 10 minutes to prepare.
The interesting take on this recipe is to sauté the mix for a couple of minutes, which can boost the anti-cancer antioxidants on the carrots, asparagus and onions. This is a fun alternative to a traditional salad, and pairs well with fish, chicken or pork.
Ingredients
1 cup of shredded carrots
1 cup of finely sliced asparagus
½ cup of yellow onions, finely chopped
1 tbs of lime juice
2 tbs olive oil
pinch of salt
Preparation
Add 1 tbs of olive oil to a medium-heat pan and sauté the onions, carrots and asparagus for 2-3 minutes, until they soften. Take away from the heat and season with lime juice and salt.
